Tater Tot Casserole

This is a very easy recipe to prepare, and it is one I remember enjoying very much when my Mom made it for my family when I was growing up. It even tastes better as leftovers!

I've seen several other versions of this recipe on-line; some use another vegetable, such as broccoli, in place of the string beans, others add cheddar cheese, but I've always made it this way. Another note: we try to use ground turkey in place of ground beef in a lot of recipes, but in this one, for best flavor, I recommend using ground round or ground sirloin (both have much lower fat content than regular ground beef) instead of ground turkey.

1 lb. ground beef
1 small onion, chopped
1 can french style/string beans, drained
16 oz. package of tater tots
1 can cream of chicken, mushroom, or celery soup (IMO, cream of chicken is best), mixed with 1 can of milk

Brown beef and onion; drain and layer in bottom of 13x9 baking dish. Layer beans, then tater tots. Pour soup/milk mixture over casserole. Bake covered at 350 degrees for 1 hour, uncovered for another 15 minutes.
