Cinnamon Coffee Cake Loaf

 

This is unbelievable! If you like cinnamon, you'll love this coffee cake in the form of a quick bread. It's delicious, and easy to make.  The recipe comes from an issue of Quick Cooking magazine.

2 cups all-purpose flour

1 1/4 cups sugar, divided

3 teaspoons baking powder

3 1/2 teaspoons cinnamon, divided

1 1/4 teaspoons salt

2 eggs

1 cup buttermilk

1/3 cup vegetable oil

2 teaspoons vanilla

3 tablespoons butter or margarine, melted

In a medium bowl, combine flour, 1 cup of the sugar, baking powder, 1 1/2 teaspoons of the cinnamon, and the salt. In another bowl, combine the eggs, buttermilk, oil, and vanilla; stir into dry ingredients just until smooth. Pour half of the batter into a greased 9 x 5 x 3 inch loaf pan. In a small bowl, combine the remaining 1/4 cup sugar and 2 teaspoons cinnamon; stir in melted butter. Drizzle half of the cinnamon mixture over the batter in loaf pan; cut through with a knife to swirl. Top with remaining batter. Drizzle with remaining cinnamon mixture; swirl with knife. Bake at 350 degrees for 55-60 minutes, or until a toothpick inserted near center comes out clean. Cool for 10 minutes before removing from pan to wire rack to cool completely.
